My favorite mountain flower is the forsythia. When I see this glorious bush blooming it just makes me happy! The weather is perfect this weekend and we've got a number of new folks in for the holiday weekend.
Our crew of West Virginia fishermen just left this morning after a successful week on the river! They gifted me with some beautiful trout all filleted and ready to cook--going to fire up the grill and cook it for supper tonight!

Campfire Version of the Blooming Onion
Several Vidalia Onions (1/2 - 1 per person) Margerine or Butter Heavy Duty Aluminum Foil Campfire with hot coals
Cut the top off of your onions, but leave the skin on. Pry the onion open a little and put a few pats of butter around inside the onion, salt & pepper to taste. Wrap it in heavy duty aluminum foil and put it down in the hot coals. Turn the onions occasionally to keep them from burning. After about 30-40 minutes your onions will be cooked to perfection. Delicious!
Breakfast Burritos
1 lb. Bulk Sausage Chopped Green Pepper Chopped Onion Sliced Mushrooms Eggs -- 2 per person Cheese Flour Tortillas Salsa
After cooking the sausage and draining off the fat, add the vegies and saute until softened. Set the meat and vegies aside, scramble the eggs and add the meat and vegies back. Warm the tortillas on the grill or campfire, fill it with the meat & egg mixture and add cheese and salsa to taste. Easy and delicious!
